just got a standard morphy richards and started it on a fast bake. the result is pretty amazing. quite a light crust but has worked well.OK, so it didn't rise and has an orangy taste from the rind. I think there was either too much milk or not enough flour because the dough never had the right consistency. Will try it again without the orange rind and adding a lil more flour. Would be helpful if u answered the following questions: type of flour and loaf size.

I prefer to make bread the old fashion way, in the oven. I feel I have more control over it, I tend to get a bigger loaf of bread, and it takes about the same amount of time. Plus, if you know how to make bread by hand, you can make other types of bread that a machine can not, such as eggbread. You CAN make it in a machine, but you end up with a loaf, instead of a braid like your supposed to. Just my two cents.

You should take the pale out of the machine to load the ingredients. That way you will not spill any ingredients into the machine to burn later. Ingredients should be refrigerated in summer, not room temperature. I keep my flour and sugar frozen year-round. Yeast should be kept in the freezer too.

he could do the same thing with that machine. he removed the paddle so there wouldn't be a hole in the bottom of the loaf. Basically he added extra steps. I like the kenwood, in the US it is sold under the DeLonghi name, and only the BM450 is available. I'm looking at that, or maybe a zojirushi.

It's Cuisinart cbk-200. The crust doesn't look even colored enough to me but maybe that's bc the lid was opened when baking which would cause the heating element to switch on more. What's great about Cuisinart's bread machines is that they're metal so you're not cooking volatile plastics and they beep b4 last rise so you can remove the paddle so no big hole on bottom of loaf. I'd like to know why so many vents, which I think would cause heating element to switch on more.

I'm with you. I was thinking the same thing. Also it looks like he licked his left ((booger finger)) after the honey scoop and then used it again immediately. I know people kneaded bread by hand in the old days but a lot more people died of disease back then too. Today’s world is global and gross bugs are also global. We need to keep that in mind and be practical.

I might be wrong but after kneeding you can talke the paddle out so it doesn`t make such a hole in the bread.

If you are having trouble getting the bread to rise enough try this..add the yeast to the warm liquid and wait 10 minutes before adding the rest of the ingredients. Works like a charm!!
Also, an important tip is that the yeast should be kept in the fridge, once the pot has been opened. About 2 years ago, I was wondering why my bread was not rising as it was only a few weeks before. The reason: I was not storing the yeast in the fridge. BTW, it says so right on the cover of the little 113 g. pot.
How do you make a loaf without the crust splitting? Mine always splits, I use normal flour not bread-flour, Will this make a difference?
Hi: I don't know exactly what you means by "crust splitting". All I can tel you is that I use the "light" setting for the crust. According to what I have read about bread flour versus all-purpose flour is that the bread flour renders a finer texture of the inside of the bread. But, it's difficult to find and then, when I find some, it's twice the price of all-purpose flour.
I've had that problem making bread via hand. You just have to make the crust split where you want it. take a seraded knife and make some gashes across the top prior to baking. The crust will split there, and it will look nice, instead of like you failed.
crust splitting is caused by oven spring and under rising. if your dough does not rise enough, when it bakes, the crust will form but then the bread will rise from the heat, breaking open the crust. you can avoid this by adding a little extra yeast (about 1/4 tsp extra but experiment with different amounts for your machine).Did you make jam in you machine? If so how did it come out? I have readed stories on how it boil out in to the machine. But I would like to try it. Any input on this.

The instruction manual I have is the Canadian version which is in French and English. On page 10 of the English side of the book, "TIMETABLE FOR THE CUISINART CONVECTION BREAD MARKER", the extreme right hand column is titled "AUDIBLE TONES" and "remove paddle". Also, every single recipe in this book has the mention to take-out the paddle. I also have a *.PDF verion of the manual which I got from Cuisinart, if I remember correctly.

OPEN YOUR EYES!!! When the blade isn't installed, what do you see when you look at the bottom of the pan? Answer: the small shaft that the blade mounts onto...hence the small hole in the bread. If you don't take out the blade at the correct time, the hole in the bread if much larger. Also, it makes it very hard to take out the bread from the pan when it's done.
